I totally have to try that banana cake, twin! We recently lost our banana bread recipe, but I would imagine banana cake would be somewhat the same. Although I would replace the walnuts with pecans or something, because my mom is allergic to walnuts. Next time I have a day without much planned, I'll get my Mom to buy the nuts and try it!

@Azlyn: Replacing the nuts would work fine, Twinzlyn! It actually didn't have nuts in the real recipe, but it tastes better with nuts, in my opinion.

@Elanor: Yum! Banana cake and banana muffins are the only kind of desserts with bananas in it that I like. In anything else, it doesn't taste that great.

Well, I don't know what other people put on it, but I put cream cheese, vanilla, and icing sugar as a topping... I think cream cheese topping tastes awesome!

Here is a recipe I just tried out today.

Chocolate Mud Cupcakes

Ingredients:

125g butter, chopped
100g Lindt dark chocolate, chopped (or any dark chocolate)
½ cup hot water
2 tsp instant coffee
¼ cup coffee liqueur, or ¼ cup of water
1 cup brown sugar
2/3 cup plain flour
¼ cup self-raising flour
2 tblsp cocoa powder
1 egg
Chocolate curls to decorate

Icing:

60g dark chocolate, chopped
60g butter, chopped

Method:

1. Preheat oven to 160*C. Line twelve muffin pans with paper cases.
2. Combine the butter, chocolate, hot water, coffee, and water in a medium saucepan over low heat. Cook, stirring for 2-3 minutes or until chocolate and butter melt and mixture is smooth. Remove from heat. Add the sugar and stir to combine. Set aside for 5 minutes to cool slightly.
3. Sift the combined flours and cocoa over the chocolate mixture and use a whisk to stir until combined. Add the egg and stir to combine.
4. Pour the mixture evenly among the prepared pans. Bake in preheated oven for 15-20 minutes or until cooked through. Transfer to a wire rack to cool completely.
5. To make the chocolate icing, melt the butter and chocolate together in a steel bowl over a saucepan of boiling water. Stir together until smooth, take off saucepan, and place the bowl in some cool water, until it’s the consistency you desire. Spread icing onto cupcakes, and decorate with the chocolate curls.
6. Enjoy!

I created a recipe for granola bars, though it may not be as good as I thought it was when I developed it a year or so ago. I should make them some time...Anyone want the recipe?

Ooh yes, please! I like Granola bars.

Okay:

Granola Treasures
3/4c + 1 1/2tsp Cooking Oil
6c Quick Oats
3/4tsp Nutmeg
3/4c Corn Syrup
1/3c + 3tbsp Brown Sugar
1 1/2tsp Cinnamon
7/8c Semisweet Chocolate Chips
1/3c Unsalted Peanuts
1 1/2tbsp Creamy Peanut Butter

Combine all ingredients except the chocolate and peanut butter. After the other ingredients are stirred well, melt chocolate and peanut butter together, then mix into the other ingredients. Spread in a greased cookie sheet, then bake at 350F for 20 minutes.

I haven't used this in a while, so please give comments on how to make it better if you actually try this. That might be too much cinnamon ...
