Hey everyone!

I had the idea of making this thread for two reason: Lady Camerie Ann and my mom.

As some of us already know, Camerie cannot have dairy, soy, or gluten, and my mom can't have sesame-seeds, clams, cranberries, or sugar.

The point of this thread is to provide recipes for people who have food intolerance(s) and allergies to certain foods.

So name your food allergies and intolerance's and we'll try to provide recipes of yummy stuff that you can eat!

If you have some recipes please share them! :D

Ah! I can help!!

Okay, I know this recipe is good because Mama Raven, Celestria, and Celestria's mom all loved them when I made them. :D

Here is the recipe:

Pecan Shortbread Cookies-healthy+gluten free

2 sticks of softened butter
2 teaspoons of unsweetened vanilla
¼ cup honey
3 ½ cups blanched almond flour
1 ½ cups toasted pecans (15 minutes on 275), chopped

Beat butter, vanilla, and honey together for 3 minutes. Add the almond flour and continue beating for another minute. Stir in the pecans.

Form dough into logs 1 ½ inches in diameter and wrap them in waxed paper. Freeze for 30 minutes.

Preheat oven to 325.

Unwrap and slice dough into 3/8 inch thick rounds. Arrange rounds about 1 inch apart on an ungreased cookie sheet. Bake approx. 12-15 minutes, or until the edges begin to brown. Cool for 5 minutes before removing from the cookie sheet.

This is a good idea, Alina. I haven't cooked much without sugar before, but it would be an experience to try it out. :)

Wow! I'm not the only one with food allergies! Not that I'd wish allergies on anyone it's just nice to... you know... know... oh, never mind.

Anyway, I sort of have too many food allergies to list, so I'll probably just pick and choose through the recipes as they come. Dairy and gluten are a big problem for my mom and me too, so I'll have to go through some of our recipes and see if I can find anything good to share with ya'll. :D

I don't have a food allergy or restriction (whether it is for good or bad, we have yet to figure that out *grin*), but my mother can't have wheat and some dairy.

Ya'll may think that this is sick, but it actually is very good and I will try and find her recipe for it. I don't know if every recipe is good.
Anyways, my mother loves to make black bean cake. Most people who hear it turn green at the thought, but when they try it they agree it is very good. It really is made from a can of black beans, but there is cocoa, so it is a chocolate cake that doesn't taste like beans. I will look for the recipe and load it when I get it.

Also, I made some chocolate bark for her for Valentine's Day. The recipe is:
2 tbsp. Coconut oil
1 tsp. cocoa
1-2 tsp. of splenda

Melt the oil until it looks clear like water. Add the cocoa and let bubble for a few seconds, then add the sweetener (I used stevia as my mother can't have splenda) and mix really well. Pour onto a tin-foiled plate that has a lip (a sandwich plate works well) and freeze until solid. Enjoy!
(Just make sure that you add enough sweetener because it can be very bitter. Trust me!)

Black bean cakes are actually quite good. My sister has made them a couple times since several ladies in our church are gluton intolerant. The recipe we used could be a bit sweeter, though.

You're right, black bean cake does sound...un...interesting. I'll have to make it sometime and find out for myself.

I love bark! Around Christmas time my friend and I made bark and sprinkled candy canes on top. It was super yummy!
