Okay, why does it take weeks for a victim to die? If these creatures have deadly venom then the victims should die relatively quickly because they introduce the venom into a person's bloodstream by scratching them.
If you want it to take weeks, then you need the venom to be more like an invasion into the body. It's more like the body must fight an intruding substance, sorta like a fever. That could make a horrible death that would take weeks to die from.
Do you want them to be killed quickly, or slowly? That would change how you develop the creatures.
Well, yes, it's sort of a fever that takes over the body. I was writing a story once, where someone was attacked by one of the Gorthen Dogs. I'll see if I can find it and post it here

Oh, and yes, they die pretty slowly. I guess it's kind of like an infection, just a slow working one. *shudders*
